An original color image is essentially three B&W shots done in register through red, blue, and green filters, so there's nearly always one or several ways to create outstanding contrast in rendering it into B&W. Moreover, the one thing you can count on in CMYK is neutrality. Thus you can lock down the separation so it won't swing on press, so I've always seen my four color B&W's print consistently across the imposition.
